The Busiest Weekend EVER!!

It seems like we have had things on our weekend to-do list forever.  And inevitably something always comes up that delays us actually getting to our to do list but this weekend - we did a ton of stuff. 

With Bill being in class after work, I have a hard time motivating myself to cook dinner.  Mostly because whatever I cook will only be eaten by me.  If I want Stewart to eat dinner, I usually have to make him something else.  And then when Bill gets home, he eats cold leftovers with tobasco sauce all over it.  (Seriously, he doesn't even heat it up.)  Last weekend, I made red chili, green chicken chili, and chicken and rice soup.  And we ate soup all week.  It was nice to not even have to worry about what I was going to cook.  And it was even nicer to not have to cook while Parker screamed in the background because I can't hold him and cook at the same time.  (I tried wearing him in the baby bjorn and I burned his little finger.)This weekend I made three casseroles.  That's right THREE.  I made Kid's Delights - an old favorite of mine that I remember mom/grammy making when I was a kid.  It's basically beefaroni.  And I made King Ranch Chicken - another old favorite from home.  And I made my own special recipie for Baked Ziti.  It is definately enough for us to eat all week.

So - all of that cooking meant I had to do a lot of kitchen cleaning.  In fact, and this is NOT an exaggeration, I loaded and unloaded the dishwasher FOUR (count em ONE, TWO, THREE, FOUR) times.  If guess if you spread it out over the weekend I really just did it once Friday night, twice Saturday, and once on Sunday.  But it felt like every time I had always just done it.  I would find myself bending over the dishwasher or pulling bottles out and I always thought to myself, "Wasn't I JUST here doing this an hour ago!"
